Ramee's Spicy Salsa...

For our wedding, Daniel and I received a small food processor. I have never once used it, even after all of this time that we have been eating healthy. Finally the other night I decided to put it to good use. I went to the store, got the ingredients I wanted and made a smashing salsa. We have a fresh veggie garden out at my mom's house that Mike plants every year. I should have gotten some of the vegetables from there but I wanted to try out my skills before making it even better with the real stuff. Anyway, here's the latest from my kitchen...

2 large, red ripe tomatoes, peeled and seeded
1 garlic clove peeled
1 Anaheim green chili, seeded and cut into thirds
1 green or white onion, cleaned and cut into 1 inch pieces
4 oz canned chopped green chilies
1 to 3 whole jalapeƱos, deveined and seeded (Optional to taste) (or a small can of jalepenos.)
1/4 cup fresh
Cilantro, chopped
1 teaspoon olive oil
1 Tablespoon lime juice
salt and pepper to taste
¼ cup ice water or ice cube.
Char tomatoes over a gas grill until the peel blisters. Peel it off so that the flesh is still firm. Remove green stem and cut vertically. Scoop out the seeds.
In the food processor, turn the motor on before dropping anything in. Slowly add in the garlic, cilantro, green onions and jalepenos to chop for a few seconds.
Add remaining ingredients. Process with brief pulses until you reach the desired texture.
You should see bits of vegetables throughout the salsa.
Use salt and pepper to taste.

You can use this salsa with chips and later mix with a fresh avocado for a great guacamole dip! Remember that there is truly no wrong way to make a salsa. You can take out or add any other ingredients that you wish to make it even better! Let me know how you like it. It sure didnt last long in our house;)

The Lord has really been moving in our midst over the last few days. I have alot to write and testify about but have to run for now.
